Pumpkin Pie Chia Pudding

One of my favourite ways to enjoy pumpkin pie spices. It’s such a quick and easy breakfast, plus super tasty.

Pumpkin is high in fibre, potassium, and packed full of vitamin C. Also full of vitamin A and zinc. Adding pumpkin seeds will increase the mood boosting effects, by increasing the amount of tryptophan. Chia seeds will give you an amazing essential fatty acid boost, plus iron, calcium and magnesium.


Pumpkin Pie Chia Pudding
Servings: 2 serves
  • 1 cup Pumpkin cooked and mashed
  • 1/2- 1 cup Coconut Water
  • 1 tsp Pumpkin Pie Spice Mix
  • 1 tsp Maple Syrup
  • 3 tbsp Chia Seeds
  1. Blend pumpkin, coconut water, spice mix and maple syrup in blender until smooth. Place in a sealable container. Stir through the chia seeds, cover and place in fridge, either for 4 hours, or overnight.

  2. When you are ready to serve, place half into a serving glass. Top with coconut yoghurt or normal yoghurt and toppings of choice. I like using seeds and berries, sometimes banana. Repeat in another glass with the remaining mixture.

    I like to layer the chia pudding and yoghurt in glass jars to make it easy to grab and go in the mornings.
